Vegan Pumpkin Bread for your Thanksgiving Table

A beautiful loaf of vegan pumpkin bread should be awaiting you this afternoon, thanks to our Environmental Super Heroes. They learned a lot about animal treatment and rights, and the choices we need to make every day.

Please enjoy right away - or maybe even better - put it in the freezer, to be taken out on Thanksgiving Day. We made these little loaves using no animal products whatsoever. Recipe follows photograph. (I should have taken picture of the process, but I will leave that to everyone's imagination.)



RECIPE
1 cup flour
3/4 cup whole wheat flour
1 cup dark brown sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp pumpkin pie spice

1 cup pumpkin puree
1/2 cup oil
3 tbsp maple syrup
3 tbsp water
1/2 cup chopped nuts, optional (of course, we didn't use them)

Preheat oven to 350 degrees F.
Grease and flour a loaf pan.
Mix together all the dry ingredients.
Mix together all the wet ingredients
Add wet mixture to dry; combine until just moistened. The batter will be very thick.

Pour into prepared pan and bake 45 - 50 minutes, or until top is browned and toothpick comes out clean.
