Thank you, parents, for a wonderful turn-out for our Poem in Pocket event this afternoon! As promised, I am including the recipe for the cookies the children made this afternoon. You will see that they really are just three ingredients - and very healthy!
Three Ingredient Vegan Coconut-Banana Cookies
1 cup shredded unsweetened coconut
1/3 cups plus 2 tablespoons organic gluten free quick cook oats
2 very ripe bananas
Preheat oven to 350 degrees. In food processor (or blender) process coconut and oats until they resemble bread crumbs. Transfer to a bowl and add two bananas and mix with a fork until everything is pasty cookie dough.
Line a cookie sheet and with the help of two spoons, form 15 cookies on the tray. Flatten with fingertips. They won't spread, so you can place them pretty close to each other.
Bake for about 20 minutes, and let cool on a rack before eating.
