Vegan Pumpkin Bread for Your Thanksgiving Feast

A beautiful loaf of vegan pumpkin bread should be awaiting you this afternoon, thanks to our Environmental Super Heroes. We made these loaves using no animal products after reading V is For Vegan - the ABCs of Being Kind.

Please enjoy right away - or maybe even better - put it in the freezer, to be taken out on Thanksgiving Day. They have been carefully wrapped using freezer paper. Recipe follows photograph, if you want to make more!



RECIPE
1 cup flour
3/4 cup whole wheat flour
1 cup dark brown sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp pumpkin pie spice

1 cup pumpkin puree
1/2 cup oil
3 tbsp maple syrup
3 tbsp water
1/2 cup chopped nuts, optional (of course, we didn't use them)

Preheat oven to 350 degrees F.
Grease and flour a loaf pan.
Mix together all the dry ingredients.
Mix together all the wet ingredients
Add wet mixture to dry; combine until just moistened. The batter will be very thick.

Pour into prepared pan and bake 45 - 50 minutes, or until top is browned and toothpick comes out clean. Recipe makes one regular loaf or 3 mini loaves.
