Robert Frost was born on March 26, 1874 - so we took this opportunity to celebrate his birthday today. We learned a little about his early life, and read some of his poems (including his most famous poem, Stopping by the Woods on a Snowy Evening). I told the children that I had learned an interesting fact about Robert Frost - it seems that his favorite way to celebrate his birthday was with cake topped with banana pudding. We made two batches of pudding, and had that over a small piece of vegan chocolate cake this afternoon.
Here is the recipe, if you want to recreate this very simple recipe at home. (I have two extra boxes of silken tofu, so it can be sooner than you think - just ask!)
Super Simple Vegan Banana Pudding
1 carton silken tofu
2-3 bananas chopped up
1 t vanilla
2 T sugar
Mix all in a blender - enjoy!
